As most of us prefer to use plant – based oils rather than animal oils to limit the intake of unhealthy fats into the body, only a handful can be harmful for the body. Cooking oils such as olive oil, Mustard Oil, cottonseed oil and sunflower oil are the ones most likely to cause certain heart related problems, regulations in blood pressure which later may cause complications in the liver, brain or eye in the form of mini-strokes. Refined Groundnut Oil is a common vegetable oil used in food chains to cook deep-fried meals and like Mustard Oil and sunflower oil it has a high burning point. It is mainly produced in countries such as India, China, Myanmar and Nigeria. Unlike Mustard Oil, it has a balanced level of MUFA and PUFA (monounsaturated fat and polyunsaturated fat) making it a good mediator of preventing heart diseases.

As health experts try to find out the details and results of the “how’s” and “why’s” of our body’s chemical and biological response to foreign proteins, toxins and fatty acids, as consumers, we are made aware of what we eat. The main components of groundnut oil are peanuts, seeds of legumes that flower above ground. The stems later reach down the surface and buries itself underground hence, the seed is also called groundnut. There are many methods of extracting oil from ground nuts, let us look into some of them :-

Here, oil is forced out by crushing the peanuts under low temperature. So, it retains most of its nutrients and taste. It is not highly refined but a raw method of obtaining natural Peanut oil.

Purification of the groundnuts

A well processed type of groundnut oil. It goes through a number of refining steps such as bleaching and purifying the groundnuts. Roasted groundnuts

This is a specialty product, usually used in gourmet cooking. The oil is not purified yet has a strong nutty aroma unlike other cooking oils and may have a similar pungent odour like Mustard oil. It is used in frying Chinese dishes as well.

Mixture with different vegetable- based oils

In order to sell it in a cheaper price, a mixture of other essential vegetable oils with peanut extract is displayed in market spaces.

Refined peanut oil is a good source of unsaturated fats however, poor refinement methods often lead to allergic reaction for people who are allergic to peanuts. This sort of allergy occurs when your immune system sees the Peanut protein as a threat to the body, which the system later raises defence against forthcoming proteins, direct consumption of peanuts often lead to swelling, irritation and choking around the mouth.
